Diabetes Diet - Fats and Cholesterol
Fats
Sixteen to twenty five per cent of the daily calorie requirement should be derived from fats. The saturated and the polyunsaturated fats should be less than 10 per cent each and the monounsaturated fats should be 10-15 per cent. Since n-3 fatty acids present in fish oils are beneficial for coronary heart disease, abnormal blood lipids and glucose metabolism two to three servings of fatty fish per week, are recommended for nonvegetarians. The vegetarians can obtain n-3 fatty acids from other sources (Ch.6) Fatty acids, present in hydrogenated vegetable oil like vanaspati, stick margarine and deeply fried fats in fast foods, should be avoided. A diabetic may have 20 g of visible fat per day, out of which one teaspoon may be ghee.
Cholesterol
Cholesterol is present in animal foods only. Half of the blood cholesterol comes from food and the other half from the cholesterol synthesized by the liver. The dietary cholesterol is related to the total and LDL cholesterol in blood, the risk factors of heart disease. More important than dietary cholesterol is the amount of saturated fat and trans fatty acids in the diet. Dietary cholesterol is more harmful in diabetics than in nondiabetics. Not more than 300 mg cholesterol should be consumed per day.
In order to reduce dietary cholesterol, egg yolk, fatty part of meat, milk fat, brain, and prawns should be drastically restricted.
